Spicy Sausage and Beans

Spicy Sausage and Beans:

De Arbol Sausage and Beans serves 4 to 6

1 pound chorizo
1 pound Italian style sausages
2 cups diced ham
2 large onions, diced
10 to 12 cloves of garlic, chopped
4 cups cooked pinto beans beef stock, broth or bouillon
1 sprig fresh Epazote(Can find in Mexican or ethnic grocery)
1 bay leaf
1 red bell pepper, seeded and diced
2 Poblano chiles, seeded and diced
1/2 bottle of Scorpion Bay De Arbol hot sauce
1/4 cup chopped fresh cilantro.

Break Chorizo into pieces and lightly sauté in a heavy skillet. Remove to a large, heavy pot. Cut the other sausage into 1 inch chunks and gently sauté in the fat from the Chorizo.

Remove and put with the Chorizo. Add the ham to the chorizo and sausage. Gently sauté the garlic and onion in the remaining fat and add to the sausages. Add the beans and enough beef broth, stock or bouillon to cover. Add the Epazote, bay leaf and chilies and Scorpion Bay De Arbol Hot Sauce adjust heat to maintain a simmer. Cover and cook for about 30 minutes. Remove from heat, stir in the cilantro and serve. This is excellent served with fresh warm tortillas.
